It’s almost the end of summer here in northern hemisphere but the spirit of summer lives on here in our blog. Ice cream is one of the most most favorite treat around the world. There are so many different flavor of ice cream ranging from the classic vanilla, strawberry, and chocolate to some exotic ones such as green tea, licorice, and even jalapeno (what?!). I’m surprised that I haven’t heard of bacon ice cream at this point. Never mind, bacon ice cream is real.
Today we’re going to make a pretty unique ice cream with an ingredient that is rarely used in cooking, lavender. This honey lavender ice cream is a delectable treat with natural sweetness from the honey infused with the subtle lavender flavor. Note that since this ice cream does not use any sugar, the texture is slightly different than your regular ice cream but it’s still extremely delicious.

To make an ice cream, there are some basic ingredients which will be used constantly such as milk, heavy cream, and eggs. We normally would add sugar too but in this case, since honey is a natural sweetener, we are omitting it from this recipe.
We want to add all our ingredients to the pot. Milk, heavy cream, eggs, lavender, and honey. Mix well with a whisk and place on stove over medium heat. Stir constantly to ensure the honey is fully dissolved.
Once the strained mixture is chilled overnight in the refrigerator, we want to whip out our ice cream machine. Follow the instruction to make the ice cream. I have a Cuisinart ICE-21 which has a frozen bowl. I froze the bowl overnight and it takes about 20-30 minutes to make a soft-serve ice cream that looks like below.
This is what we get from our ice cream machine. It’s kind of a soft-serve ice cream texture but if you want a harder ice cream, put them in a container and freeze for a few hours or overnight.
- 1 cup milk
- 1 cup heavy cream
- 2 eggs
- 1-2 tablespoons dried edible lavender (to taste)
- 1.5 cups honey
- Mix in the eggs, milk, heavy cream, honey and lavender. Mix well
- Place on stove over medium heat. Stir with whisk to dissolve honey
- When mixture is simmering, remove from heat, cover, and steep for 20-30 minutes
- Strain mixture
- Cover and chill in refrigerator overnight to cool
- Follow instruction on your ice cream machine to make the ice cream!
